CUCUMBER SALAD WITH POMEGRANATE AND FETA

Yield: 4 servings


Ingredients

2 English cucumbers

seeds from 1 pomegranate

½ cup feta

½ cup cilantro, chopped

juice of 1 lime

¼ cup extra virgin olive oil

sea salt and pepper to taste

sumac, optional for garnish


Directions

  1. Peel cucumbers and slice in half lengthwise and then into half moons.

  2. Add cucumbers, all but ¼ cup pomegranate seeds, feta, cilantro, lime juice, olive oil, salt and pepper to a large bowl and toss gently. Taste and adjust seasoning as desired.

  3. Top with remaining pomegranate seeds and sprinkle with sumac, if desired. Enjoy!
